Ingredients: 1 1/2 cups (225 g) unbleached all-purpose flour; 1/2 tsp baking powder; 1/4 tsp salt; 1/2 cup (115 g) unsalted butter, softened; 1/3 cup (55 g) maple sugar; 1/2 tsp (2.5 ml) vanilla; 1 egg; 1/2 cup (125 ml) cold maple butter; 2 tbsp unsalted butter, softened; Icing sugar, for sprinkling

Preparation

Cookies
- In a bowl, combine the flour, baking powder and salt.
- In another bowl, cream the butter, maple sugar and vanilla with an electric mixer. Add the egg and mix well. With the machine running on low speed, add the dry ingredients and mix until the dough comes together. Remove the dough from the bowl and shape into a disc with your hands. Cover with plastic wrap and refrigerate for 1 hour.
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line two baking sheets with silicone mats or parchment paper.
- On a lightly floured work surface, roll the dough out until 1/8 inch (3 mm) thick. Using a 1 ½-inch (4 cm) round cookie cutter, cut out cookies. Arrange the cookies spaced out on the baking sheets. Reuse any dough scraps. Using a smaller round (or other shape) cookie cutter, or the end of a plain pastry tip, cut out holes from the centres of half of the cookies.
- Bake one sheet at a time for 10 to 12 minutes or until the bottoms and edges of the cookies are lightly browned. Let cool completely on the baking sheets, about 1 hour.
Maple Filling
- Meanwhile, in a bowl, whisk the maple butter and unsalted butter with an electric mixer for 2 minutes or until the mixture is pale and creamy. Cover and refrigerate for 30 minutes. Whisk again until stiff peaks form.
- Transfer the maple filling into a pastry bag fitted with a plain tip. Cover the bottoms of the cookies without holes with the maple filling. Top each one with a cookie with a hole to form sandwiches. Sprinkle with icing sugar. The cookies will keep for 1 week in an airtight container at room temperature.
