Ingredients

- 2 oz (60 ml) pisco
- 1 oz (30 ml) lime juice
- 4 tsp (20 ml) cane syrup
- 2 tsp (10 ml) egg white (see note)
- 1/2 cup (125 ml) ice cubes
- 3 drops Angostura-type bitters

Preparation

- In a cocktail shaker, vigorously mix the pisco, lime juice, cane syrup, egg white and ice cubes for 1 minute.
- Strain through a sieve over a very cold lowball whiskey. Add the drops of bitters. Use a toothpick to trace small hearts in the foam, if desired.

Note from Ricardo

The egg white can be replaced with a vegan emulsifier. The NOROI distillery has created a product that produces a good amount of froth by only adding a few drops to your cocktail.
