Use store-bought tzatziki or Greek yogurt mixed with fresh herbs such as mint and dill.

The pork chop and vegetables can be cooked in an air fryer. Place the pork chop in the basket of the air fryer. Cook for 12 to 14 minutes at 400°F (200°C) or until pink at the centre and a thermometer inserted in the centre reads 135°F (57°C), turning the meat over halfway through. Place the pork chop on another plate and cover with foil. Let rest while you cook the vegetables. In a bowl, combine the zucchini and onion with the oil. Season with salt and pepper. Spread the vegetables out in the basket of the air fryer. Cook for 8 minutes, stirring twice. Add the tomatoes. Continue to cook for 2 minutes or until the tomatoes release their juice. Adjust the seasoning. You can reheat the pork chop for 1 minute before serving.
