Ingredients: 2 lb (900 g) ripe peaches, pitted and cubed; 1/4 cup (55 g) brown sugar; 3 tbsp (45 ml) lemon juice; 1 tsp (5 ml) almond extract or Amaretto-style almond liqueur (optional); 1/2 cup (105 g) brown sugar; 1/2 cup (75 g) unbleached all-purpose flour; 1/2 cup (65 g) ground almonds; 1/2 cup (50 g) quick-cooking oats; 1/4 cup (30 g) thinly sliced almonds; 1 pinch salt; 1/2 cup (115 g) unsalted butter, softened

Preparation

Peach Filling
- With the rack in the middle position, preheat the oven to 350°F (180°C). Generously butter a 10-inch (25 cm) cast iron pan or an 11 x 8-inch (28 x 20 cm) glass dish.
- In a bowl, gently mix all of the ingredients together. Spread out in the prepared pan.
Oat Crumble
- In the same bowl, combine all of the ingredients except for the butter. Add the butter and mix just until the dry ingredients are moistened and the mixture clumps together when pressed between your fingers. Cover the peach mixture with the oat crumble.
- Bake for 50 minutes or until the crumble is golden and the peach filling is bubbling. Let cool before serving. Delicious served with a scoop of vanilla ice cream.
