Ingredients

• Apple-Raisin Topping (for 12 cookies)

  • 1 small Cortland apple, unpeeled, cored and diced
  • 1 tbsp sugar
  • 1/4 tsp ground ginger
  • 3 tbsp raisins

• Peanut-Caramel Topping (for 12 cookies)

  • 6 tbsp (60 g) unsalted roasted peanuts
  • 6 tbsp (60 g) toffee bits (see note)

• Chocolate-Cranberry Topping (for 12 cookies)

  • 6 tbsp (60 g) dark chocolate, chopped
  • 6 tbsp (60 g) dried cranberries

• Cookies

  • 1 3/4 cups (175 g) quick-cooking oats
  • 3/4 cup (115 g) unbleached all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 cup (210 g) brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1 tbsp (15 ml) milk
