Name: Oven-Baked Apple Turnovers

Ingredients: 1/4 cup (55 g) sugar; 1 1/2 tsp cornstarch; 1/4 tsp ground cinnamon; 1 Cortland apple, peeled, cored and cut into small dice; 1 McIntosh apple, peeled, cored and cut into small dice; 2 tbsp (30 ml) lemon juice; 1 1/2 cups (225 g) unbleached all-purpose flour; 2 tbsp sugar; 1/2 tsp baking powder; 1/4 tsp salt; 1/2 cup (115 g) cold unsalted butter, diced; 3 tbsp (45 ml) cold milk; 2 eggs; 1/2 cup (65 g) icing sugar; 2 tsp (10 ml) water; 1/2 tsp (2.5 ml) vanilla

Preparation

Apple Filling
- In a small pot off the heat, combine the sugar, cornstarch and cinnamon. Add the apples and lemon juice. Bring to a boil over medium heat while stirring. Cover and cook over low heat just until the apples are tender, about 10 minutes. Transfer into a bowl and let cool. Cover and refrigerate until completely chilled.
Dough
- In a food processor, combine the flour, sugar, baking powder and salt. Add the butter and pulse a few times, until it forms pea-sized pieces. Add the milk and 1 egg. Pulse just until the dough starts coming together. Add more milk, as needed. Remove the dough from the food processor and form into a square with your hands. Cover with plastic wrap and refrigerate for 1 hour.
- With the rack in the middle position, preheat the oven to 400°F (200°C). Line a baking sheet with a silicone mat or parchment paper.
- In a small bowl, beat the remaining egg. Set the egg wash aside.
- On a floured work surface, roll the dough out to form a large 16 x 12-inch (40 x 30 cm) rectangle, about 1/8 inch (3 mm) thick. Using a knife, cut the dough into six 5-inch (12.5 cm) squares. Cut each square into two triangles.
- Divide the apple mixture among the 12 triangles, placing the filling at the centre. Brush the edges of each triangle with some egg wash. Fold one point over to the opposite point, stretching the dough slightly to form a triangle. Using a fork, press the edges together to seal in the filling. Place the turnovers on the baking sheet, evenly spacing them out. Brush with the egg wash.
- Bake for 22 to 24 minutes or until golden. Let cool on a wire rack.
Icing
- Meanwhile, in a small bowl, combine all of the ingredients. If necessary, add a small amount of water or icing sugar to obtain a slightly runny icing. Transfer into a pastry bag fitted with a small 1/8-inch (2 to 3 mm) plain tip. Drizzle the icing in a zig zag motion over the warm turnovers.
