Cocktail lovers, Ricardo has developed a new version of Aperol sour, which combines gin, bitter orange liqueur, lemon juice, simple syrup and a cocktail emulsifier that creates a frothy texture. The perfect drink for cocktail hour!

Ingredients

- 1/2 cup (125 ml) ice cubes
- 1 1/2 oz (45 ml) Aperol or other bitter orange liqueur
- 1 1/2 oz (45 ml) gin
- 1 oz (30 ml) lemon juice
- 1 oz (30 ml) simple syrup
- 1/2 tsp (2.5 ml) cocktail foamer (see note)
- 1 slice lemon

Preparation

- In a cocktail shaker, vigorously combine the ice cubes, Aperol, gin, lemon juice, simple syrup and foamer. Pour, without straining, into a stemless wine glass. Garnish with the lemon slice. Add more ice cubes as needed.

The cocktail foamer can be replaced with 2 tsp (10 ml) egg white.
