  1. Ricardo makes this look easy, I have used flour & water to thicken sauces but I will try this method. How much liquid can be thickened with a 1/4 cup of roux?

  2. The proportion of flour to butter was something I didn't know so that was useful information. Still, I don't know how much liquid can be thickened with the 1/4 cup butter/flour paste.
