1. Vegetable and Ham Soup with Raclette Croutons

For instant comfort, serve up a hearty bowl of this ham soup garnished with croutons topped with raclette cheese, somewhat like a French onion soup. It’s loaded with cubes of ham, white beans, peas and corn, making it a complete meal.

2. Chicken Cordon Bleu

Chicken cordon bleu is a classic that was missing from our repertoire, and we wanted to revive it. To prepare it, butterfly half chicken breasts, stuff them with thin slices of ham and Gruyère cheese, and then bread them. The breadcrumbs become perfectly crispy while the cheese melts beautifully. No sauce is needed for this already rich and saucy dish.

3. Leek and Ham Puff Pastry Tarts with Apple-Tarragon Salad

For a classic appetizer, shape puff pastry squares and bake them until nicely golden. Fill them with an Emmental and tarragon béchamel sauce, along with tender leeks and chopped ham. To top it off, a julienned apple salad is added, providing a pleasant balance with the heartier ingredients.

4. Pappardelle with Ham and Radicchio Ragù

In this recipe, use leftover roasted ham by incorporating it into a sauce similar to a Bolognese, where it replaces ground meat. The sauce is made from ham broth, vegetables and tomato paste that simmer until rich and thick. At the end of cooking, add radicchio to balance the sweet taste of the carrots in the sauce with its bitterness, and then add a bit raw as a garnish for extra crunch and finesse. Mixed with pappardelle and a generous dose of Parmesan cheese, it’ll be a pretty fancy dish for entertaining.

5. Ham Steaks with Creamy Sage Sauce

Take inspiration from French bistros and prepare creamy pepper and sage sauce to accompany ham steaks! This recipe calls for smoked toupie-type ham, which you can easily find at the supermarket. Cut into thick slices and brown them on each side for just a few minutes. It’s a refined-looking dish without the price tag of a large cut of meat.

6. Waffles with Ham, Poached Eggs and Béarnaise Sauce

Who ever said that waffles should only be sweet? This savoury waffle recipe is sure to be a hit at the next family brunch. Start by making a buttery spinach topping and place some on a waffle with a slice of ham and a poached egg. Pour on some homemade Béarnaise sauce for an irresistibly indulgent meal.
