1. Classic Smash Burgers
Cheeseburgers can immediately put a smile on anyone’s face. In the world of smash burgers, these are the great classics. Here, we chose a medium-lean ground meat in order to have a fat ratio high enough to ensure caramelization. After flipping the patties, place a slice of cheese (orange, of course!), which will melt for a few seconds before you place the patties in the burger buns with a sauce made from ketchup, mustard and relish for a revisited taste of nostalgia.

“The key to a good smash burger is a very hot cooking surface so that the meat is seared perfectly. You also have to press the meat firmly and evenly so that it’s the same thickness throughout. A metal spatula is essential for this step. The result is a beautiful flat patty with a perfect colouring.”
2. Caesar-Style Smash Burgers
A creamy dressing, bacon, crisp lettuce and fresh Parmesan cheese: we’ve put everything we love about Caesar salad in this version. Make a quick and super tasty condiment thanks to Parmesan and capers to spread on the buns and to coat the lettuce leaves. Be sure to also add a Parmesan tuile; just melt the cheese on parchment paper placed on a baking sheet. Simple and effective!
“The Parmesan tuile gives this burger some serious punch. It’s really a nice addition of flavour and texture.”
3. Crispy Smash Burgers with Barbecue Sauce
These impressive-looking smash burgers are our most decadent offering. First, they’re topped with julienned fried potatoes. Coat them with cornstarch before cooking because you want them to be very crispy, even if they contain a lot of water. Then, brush the meat patties with sweet and smoky barbecue sauce, and spread cream cheese on the buns for a rich, creamy texture. All that’s left to do is take a bite and try not to let anything fall out.

“Since I enjoy eating smash burgers at restaurants, I performed a few tests on the grill. I came to the conclusion that I had to use a little less meat (about 85 grams per patty) than for a regular burger in order to get a nice crust on the surface. For seasoning, salt and pepper are all you need.”
Here are some accessories that make it easier to prepare smash burgers:
- • RICARDO Burger Press: This accessory allows you to form perfectly round burger patties.
- • RICARDO Smash Burger Press: This press is essential for flattening the burger patty firmly on the baking sheet.
- • RICARDO Smash Burger Spatula: With its large surface area and straight beveled edges, this spatula makes it easy to remove meat from the grill.
