3 Seasonal Recipes Starring Morello Cherries

Our chefs Laurence and Alexane picked all the morello cherries (a.k.a. sour cherries) from a tree growing near the parking lot of RICARDO headquarters. They decided to create a few recipes with this tart fruit that can be found almost everywhere across Quebec.

1. Morello Cherry Galette

This rustic-looking galette is the ultimate in summer simplicity. It requires just one crust, with the edges folded over the fruit filling, made from homemade dough that bakes up crisp and flaky. While it chills in the fridge, use this time to pit the sour cherries, which are then flavoured with a bit of almond extract. The balance between the cherries’ tartness and sweetness makes for an irresistible dessert you’ll want to make again and again, all summer long.

2. Morello Cherry Vodka

With sour cherries from your garden, you can make an infused vodka by simply submerging the fruit in the neutral alcohol. Let the cherries steep for at least a month, to create both a flavoured vodka and alcohol-soaked cherries to garnish cocktails with. Given that the preparation keeps in the fridge for months, you’ll be able to enjoy it long after cherry season ends!

3. Morello Cherry Pink Lemonade

Before throwing out your cherry pits, get the most out of them by using them to make a syrup that can flavour a simple lemonade made with lemon juice and sparkling water, or even a cocktail. The sweet syrup has a pleasant flavour reminiscent of cherry candy. It’s a lovely, refreshing drink to enjoy in the backyard.
