5 Recipes to Stretch Summer into Fall

Even during the back-to-school season, it’s still possible to get inspired by the simplicity of summer. There are still many gorgeous days ahead, so why not enjoy them? Cook transitional dishes with the last of the seasonal products, using them efficiently.

1. Grilled Merguez with Herbed Tomatoes

The end of summer is the perfect time to spend at the barbecue. Once the high temperatures are behind us, it’s even more pleasant to use the grill. Serve grilled merguez with sliced raw vegetables, sprinkled with a herb, lemon and Parmesan dressing as a simplified salad.

2. Pork Tenderloin with Herbs and Creamy Yogurt Pasta Salad

Some types of noodles can be eaten cold and cooked in advance, like rice vermicelli, udon noodles and various pastas. When you serve them in salads, they make perfect dishes for the last warm days. You’ll also like them served as a side for a grilled dish, like pork tenderloin.

A winning dish, this gratin is ready in less than 30 minutes. All you need to do is prepare a mixture of parsley, dill and panko breadcrumbs to coat the cod fillets, then bake them in the oven. It’s a great way to use the last herbs from your garden.

4. Ham, Egg and Fresh Herb Sandwiches

Even after eating it for years, it’s still possible to reinvent the ham sandwich. Use a velvety cream cheese and a mixture of herbs and pickles to punch up the flavour, making your lunch look like a picnic.

5. Steaks with Grilled Corn and Cilantro

Save time on weeknights by cooking the steak and ears of corn side by side. Top the meat with the golden kernels, plus radishes, cilantro and lemon juice for a fresh and colourful meal.
