Ingredients: 1 ½ lb (675 g ) small baby potatoes, halved; 3 tbsp (45 ml) vegetable oil; ¾ lb (340 g) thin asparagus, trimmed; ⅓ cup (30 g) panko breadcrumbs; 1 tbsp butter, melted; ½ cup (125 ml) mayonnaise; 1 tsp (5 ml) harissa; 1 lb (450 g) cod or haddock fillets, cut into 4 pieces

Ingredients

- 1 ½ lb (675 g ) small baby potatoes, halved
- 3 tbsp (45 ml) vegetable oil
- ¾ lb (340 g) thin asparagus, trimmed
- ⅓ cup (30 g) panko breadcrumbs
- 1 tbsp butter, melted
- ½ cup (125 ml) mayonnaise
- 1 tsp (5 ml) harissa
- 1 lb (450 g) cod or haddock fillets, cut into 4 pieces

Preparation

- In a bowl, toss the potatoes with 2 tbsp (30 ml) of the oil. Season with salt and pepper.
- Spread the potatoes out in the basket of an air fryer. Cook for 20 minutes at 400°F (200°C) or until the potatoes are tender and golden, stirring halfway through cooking.
- Meanwhile, in the same bowl, coat the asparagus with the remaining oil. Season with salt and pepper. Set aside.
- In a small bowl, combine the breadcrumbs and butter. Set aside.
- In another bowl, combine the mayonnaise and harissa.
- Season the fish with salt and pepper. Using a pastry brush, cover the top of the fish pieces with 1 tbsp (15 ml) of the spicy mayonnaise. Top with the breadcrumb mixture and press down lightly.
- Remove the basket from the air fryer. Place the asparagus over the potatoes. Gently place the fish over the asparagus, evenly spacing out the pieces. Continue to cook for 8 to 10 minutes or until the fish is cooked through and the breadcrumbs are slightly browned.
- Divide the fish, asparagus and potatoes among four plates. Serve with the remaining spicy mayonnaise.
