These homemade waffles are wonderfully crispy and light. The recipe is best prepared the night before, so that the batter has time to rise. They're delicious served simply with maple syrup or even a savoury topping, like our recipe for waffles with ham, poached eggs and béarnaise sauce.

Note from Ricardo

If you would like to make the batter the morning that you plan to serve the waffles, let the batter rise in a warm, humid spot for 1 hour or until doubled in volume.

Once frozen, the waffles can be reheated in an oven preheated to 300°F (150°C) for 8 to 10 minutes, or in a toaster set to medium heat. If using a toaster, the waffles will be slightly crispier.
