Ingredients: 2 lb (900 g) yellow onions, peeled (about 6 to 8 onions); 1/4 cup (55 g) butter; 1/2 cup (125 ml) red wine; 4 cups (1 litre) beef stock; 1 tbsp thyme leaves, finely chopped, plus more for serving; 1 baguette, thinly sliced; 3 tbsp butter, melted; 1 1/2 cups (150 g) medium-sharp cheddar cheese, grated; 1 1/2 cups (150 g) Gruyère cheese, grated; 1/2 cup (125 ml) mayonnaise; 1/2 cup (125 ml) sour cream; 3 green onions, thinly sliced

Preparation

Onions
- On a work surface, quarter the onions. Thinly slice each quarter to get short strips.
- In a large skillet over medium-high heat, cook the onions in the butter, stirring often, until nicely browned, about 20 minutes. Season with salt and pepper. Set 1/4 cup (60 ml) of the onions aside for the dip.
- Deglaze the skillet with the wine and let reduce until almost dry. Add the broth and thyme. Mix well. Bring to a boil. Over high heat, let reduce until dry. Adjust the seasoning.
Crostini
- Meanwhile, with the rack in the middle position, preheat the oven to 350°F (180°C).
- On a non-stick or parchment paper-lined baking sheet, lay out the slices of bread. Using a pastry brush, coat with the butter. Season with salt and pepper.
- Bake for 12 to 14 minutes or until golden. Remove the baking sheet from the oven. Preheat the oven to broil.
- Line another baking sheet with foil. Cover with half of the crostini. Top with half of the onion mixture and half of the cheeses. Repeat layering in the remaining ingredients.
- Broil for 3 to 4 minutes or until the cheese is golden. Remove the baking sheet from the oven. Sprinkle with thyme leaves.
Onion Dip
- Meanwhile, in a bowl, combine all of the ingredients with the reserved onions. Season with salt and pepper. Serve the crostini with the onion dip.
