In another bowl, whisk together the egg, ricotta, ale, Parmesan, herbs, chili pepper and lemon zest. Stir in the dry ingredients. With a wooden spoon, stir in the lobster meat.
Using a 1-tbsp (15 ml) ice cream scoop, drop 9 balls of fritter batter at a time into the hot oil. Watch out for splattering. Fry for 2 to 3 minutes or until the fritters are nicely browned, turning them over a few times. Drain on the baking sheet. Season with salt. Keep the fritters warm in an oven preheated to 200°F (95°C) while you fry the remaining fritters (see note).
Transfer the lobster fritters to a serving dish. Sprinkle with more chili pepper, cilantro and lemon zest. Serve the fritters with the sauce.

Once the fritters have been fried, you can refrigerate or freeze them on a baking sheet. Once frozen, transfer them to an airtight container. They will keep for 3 days in the refrigerator or 3 months in the freezer. You can reheat them on a baking sheet in an oven preheated to 400°F (220°C) for about 10 minutes (if refrigerated) or 15 minutes (if frozen), or in an air fryer at 350°F (180°C) for 5 minutes (if refrigerated) or 10 minutes (if frozen), or just until heated through and crispy.
