Classic Tuna Tartare

Ingredients

• Mayonnaise

  • 1/4 cup (60 ml) mayonnaise
  • 2 tbsp sour gherkins, finely chopped
  • 2 tbsp capers, chopped
  • 1/2 lemon, zest finely grated
  • 2 anchovy fillets, chopped, or more to taste
  • 1 tsp (5 ml) Worcestershire sauce
  • 1/4 tsp (1 ml) hot sauce, or more to taste

• Croutons

  • 2 slices brioche, each about 1 inch (2.5 cm) thick

• Shallot

  • 2 tbsp shallot, finely chopped
  • 1 tbsp (15 ml) lemon juice
  • 1 tbsp (15 ml) water

• Tartare

  • 1/2 lb (225 g) very fresh red tuna
  • 3 tbsp (45 ml) olive oil
  • 2 tbsp chives, finely chopped
  • 2 tsp (10 ml) lemon juice
  • 1 tsp (5 ml) Worcestershire sauce
  • 1/4 tsp (1 ml) hot sauce, or more to taste

• Topping

  • 2 Lebanese cucumbers, cut into small dice
