  1. Preheat the oven to 200 °C (400 °F).
  2. Sprinkle a little cornmeal on the hot pizza stone and on the pizza peel. Roll out the dough to a 20-cm (8-inch) crust.
  3. Dock the dough evenly with a fork. Brush with oil. Sprinkle with the herbs and salt.
  4. Slide the focaccia on the pizza stone. Bake at the bottom of the oven for about 15 minutes. Cut into thin slices and serve as an aperitif.

Good with...


  1. Made a little different only because I didn’t have the cornmeal or the pizza stone. Put some olive oil (about 1 1/2 tbsp) in a square cake pan. Spread and dimpled the dough, then brushed a little olive oil over the dough. Sprinkled 1/2 of the herb spice blend on top. I covered and let rise for an hour. Put in a hot oven (425) for about 10-12 minutes. Everyone really enjoyed. Will definitely will make again. Looking forward to trying it as written tho. I’m sure it’ll be superb!
