  1. In a saucepan, soften the onion in the butter over medium heat. Add the carrots, potatoes and broth. Bring to a boil.
  2. Cover and simmer gently for about 20 minutes or until the vegetables are tender.In a blender, purée the soup until smooth. Season with salt and pepper.


The little adventurous cook can add herbs like thyme, parsley or chopped fresh ginger.

Freezes well.


  1. Added pumpkin left over from Halloween, ginger, bay leaves and carrot juice, easy and so delicious.

  8. Excellent recipe. It was very easy to make and I did add in some fresh ginger and parsley because I read the comments and figured that that would be a great addition. It was smooth and subtle in taste. Loved it.

  13. Amazing soup! Very easy to prepare, I added fresh ground pepper, just a pinch of salt and fresh thyme during the simmering process and the souo turned out amazing! Thank you Ricardo! I'll definitely be making this again.
