Cream of Bell Pepper Soup with Crab Topping

Crab Topping (optional)


  1. In a saucepan, soften the onion in the oil until translucent. Add the bell peppers, potatoes and chicken broth. Bring to a boil. Cover and simmer for about 15 minutes or until the potatoes are tender.
  2. In a blender, purée the soup until smooth. Adjust the seasoning. Keep warm.

Crab Topping

  1. In a skillet, gently heat the crab meat in the butter.
  2. Serve the Cream of Bell Pepper Soup and garnish the centre with crab pieces. Sprinkle with the chives.


  1. Extremely good soup, take the time to roast your own peppers, you won't regret it! Planning on making a triple batch next time! Freezes well!!
