- In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.
- In a large pot of salted water, cook the potatoes until tender. Rinse under cold running water and drain. Cut in half or quarters.
- In a bowl, combine the warm potatoes and corn. Add the dressing and toss gently. Adjust the seasoning. Refrigerate for about 1 hour.
