  1. In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.

Salad

  1. In a large pot of salted water, cook the potatoes until tender. Rinse under cold running water and drain. Cut in half or quarters.
  2. In a bowl, combine the warm potatoes and corn. Add the dressing and toss gently. Adjust the seasoning. Refrigerate for about 1 hour.

Did you know?

You can grow most varieties of potatoes consumed at home, just put in the ground when germinated (germ side up).
