Paella

Ingredients

• • 4 cups (1 litre) chicken broth, warm
  • 2 pinches of saffron, or more to taste
  • 4 chicken drumsticks
  • 1 tablespoon (15 ml) butter
  • 3 tablespoons (45 ml) olive oil
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 1/2 red bell pepper, cored and diced
  • 1/2 teaspoon (2.5 ml) paprika
  • 1/2 cup (125 ml) white wine
  • 2 cups (500 ml) parboiled rice
  • 2 plum tomatoes, seeded and diced
  • 1/2 cup (125 ml) frozen peas
  • 2 tablespoons (30 ml) fresh parsley, finely chopped
  • Cayenne pepper, to taste
  • 20 medium shrimp, peeled with tail intact
  • 20 mussels
  • Lemon wedges
  • Salt and pepper
