Almond Jelly

  1. In a saucepan, combine all the ingredients. Bring to a boil, stirring with a whisk. Simmer for about 1 minute. Season with salt and pepper. Pour into a 23 x 13-cm (9 x 5-inch) loaf pan. Allow to cool. Refrigerate until completely chilled. Cover the dish with plastic wrap and refrigerate for about 24 hours. Unmould and remove the plastic wrap. Trim the sides and cut in about 1-cm (1/2-inch) cubes.

Cream of Squash Soup

  1. In a saucepan, soften the onions and garlic in the oil for about 5 minutes. Add the squash and cook until it just begins to soften. Add the broth. Bring to a boil and simmer uncovered for about 20 minutes. Add the cream. In a blender, purée until smooth. Strain. Season with salt and pepper. Keep warm.

Crispy Parmesan Chips

  1. With the rack in the middle position, preheat the oven to 190 °C (375 °F).
  2. Line two baking sheets with parchment paper.
  3. Spread about 30 ml (2 tablespoons) of grated Parmesan for each chip, so it has a diameter of about 2-cm (3/4-inch) larger than the rim of the glass in which you will serve the soup (about six chips per sheet).
  4. Bake for 8 to 10 minutes or until the chips are golden yellow. Make sure that the Parmesan is not too brown, because it will taste very bitter. Cool completely.

Assembly

  1. In twelve 310 ml (1 1/4 cups) capacity glasses, pour about 125 ml (1/2 cup) of squash soup. Place a Parmesan Chip flat on the rim of the glass. Garnish with herbs and four cubes of almond jelly.

Note

Agar-agar is a gelatin produced from a tasteless seaweed. It is used because it does not melt when heated and does not need refrigeration. It is found in natural food stores and Asian grocery stores. Use the remaining almond jelly in your desserts, coffee or on a green salad.
