Maple Pork Chops with Buttered Broccoli Stalks

Butter Brocoli Stalks


  1. Trim off the fat from the chops. In a large skillet, sear them over medium heat in the oil and 15 ml (1 tablespoon) of butter until golden brown, about 3 minutes per side.
  2. Season with salt and pepper.
  3. Meanwhile, in a saucepan, soften the onion in the remaining butter until translucent. Sprinkle with the flour and add the liqueur. Stir and cook for 2 minutes. Add the remaining ingredients and bring to a boil over medium heat, stirring constantly. Reduce by a little more than half, about 5 minutes.

Butter Brocoli Stalks

  1. Meanwhile, sauté the blanched broccoli stalks in the butter.
  2. Place one chop on each plate, top with the sauce and serve with the broccoli stalks and rice.


Sortilege is a liqueur made with Canadian whiskey and maple syrup. It is an interesting product to deglaze meat and add a little sweetness. You can substitute with a mixture of maple syrup and whiskey, to make this recipe without alcohol, use 60 ml (1/4 cup) water or chicken broth and 15 ml (1 tablespoon) maple syrup instead of whiskey.
