  1. In a saucepan, sauté the rice in the oil for about 2 minutes, without browning. Add the broth, honey and lime zest. Season with salt and pepper. Bring to a boil. Reduce the heat to low, stir and cover. Cook for 15 to 20 minutes or until the rice is tender. Add the lime juice and green onions. Adjust the seasoning.

  1. Ricardo, this was a delicious dish. I was looking for something pseudo-Mexican, and all the recipes I found included cilantro. I am one of those for whom cilantro tastes like soap, so I didn't want to go that route. Your version of lime rice was the perfect counterpoint to white fish Veracruz - particularly because I somewhat over-salted the sauce. Together, the rice and fish balanced each other out.
