Ingredients

  • 1/4 cup (60 ml) butter, softened
  • 1/4 cup (60 ml) parsley, chopped
  • 2 tablespoons (30 ml) Dijon mustard
  • 1 whole chicken, about 4 lbs (1.8 kg)
  • Salt and pepper

• Orange Sauce

  • 1 tablespoons (15 ml) butter
  • 1 tablespoon (15 ml) all-purpose flour
  • 1/2 cup (125 ml) orange juice
  • 1/2 cup (125 ml) chicken broth
