  1. In a saucepan, bring the rice and water to a boil. Cover and simmer over medium heat for about 1 hour. Drain. Place the cooked rice in a bowl and let cool.
  2. In a salad bowl, combine the cooled rice with the remaining ingredients. Adjust the seasoning and serve.
