Toasted Sesame Mashed White Beans

  1. In a saucepan, combine all the ingredients. Gently reheat the mashed beans, stirring frequently. Keep warm. 


Oriental Chicken

  1. With the rack in the middle position, preheat the oven to 180 ˚C (350 ˚F).
  2. In a bowl, combine the pistachios, sesame seeds and spices. Coat the meat with the spice mixture. Season with salt and pepper.
  3. In a large ovenproof non-stick skillet, brown the chicken on each side. Add the lemon wedges. Bake for about 25 minutes or until the meat is cooked and the lemons are caramelized.
  4. Slice the chicken. In four plates, place atop the mashed beans. Serve with the lemon wedges. Delicious with Brussels sprouts and diced tomatoes.
