  1. In a bowl, combine the mayonnaise and mustard.

  1. Spread the inside of the breads with dijonnaise. Cover with the ham, cheese, gherkins and pork slices. Close the sandwiches.
  2. In a large ridged skillet or panini grill, grill the sandwiches over medium heat for 3 to 4 minutes per side, pressing down with a spatula. Serve immediately.
