    • 1 turkey, fresh or frozen, about 16 lbs (7 kg)
    • 7 teaspoons (35 ml) salt (table salt)
    • 1/2 cup (125 ml) unsalted butter, softened
    • 2 teaspoons (10 ml) dry mustard
    • 1/2 teaspoon (2.5 ml) ground cinnamon
    • 1/2 teaspoon (2.5 ml) ground nutmeg
    • 1/2 teaspoon (2.5 ml) ground coriander seed
    • 2 cups (500 ml) chicken broth
  • Sauce

    • 1 onion, diced
    • 4 cloves garlic, lightly crushed
    • 3 tablespoons (45 ml) butter
    • 1/3 cup (75 ml) cognac
    • 8 cups (2 litres) chicken broth (preferably reduced in salt)
    • 1 tomato, diced
    • 1 tablespoon (15 ml) Worcestershire sauce
    • 3 bay leaves
    • 3 tablespoons (45 ml) cornstarch
    • 3 tablespoons (45 ml) water
