  1. With the rack in the middle position, preheat the oven to 400°F (200°C).
  2. Place the pizza dough on a baking sheet. Spread with the onion compote and top with the bacon and cheese. Generously season with pepper.
  3. Bake for 10 minutes or until the crust is crispy. Cut into 16 squares.

Note

You can substitute the onion spread with sour cream. In this case, add ¼ thinly sliced onion on the pizza.

  1. We just got back from the Alsace region of France and discovered this gem of a recipe. I used the sour cream as the base, pancetta and onion slivers (what I had on hand). I cannot wait to try the onion jam. On another note, I am gluten free. I used a gluten free flour tortilla as my base and I used Lavash (flat bread) as the base for those without Gluten allergies. Excellent!
