In a glass dish, combine the oil and spices. Generously season with salt and pepper. Add the chops and coat thoroughly with the marinade. Marinate in the refrigerator for 15 minutes, or overnight.
Preheat the grill, setting on high. Oil the grate.
In a saucepan, brown the onion in the butter. Season with salt and pepper. Add the vegetables and garlic and sauté for 2 minutes. Add the broth and currants and bring to a boil. Add the couscous and stir well. Cover and remove from the heat. Let rest for 5 minutes. Fluff the couscous with a fork and stir. Add the parsley and adjust the seasoning. Keep warm.
Meanwhile, reduce the heat to medium. Remove the chops from the marinade and grill for 4 to 5 minutes on each side for medium rare, or until the desired doneness. Serve with the couscous.
