Cheddar and Broccoli Soup

Ingredients

  • 1 shallot, finely chopped
  • 1 clove garlic, finely chopped
  • 3 tbsp (40 g) butter
  • 4 thin slices ham, finely chopped
  • 1/4 cup (40 g) unbleached all-purpose flour
  • 1 pinch ground nutmeg
  • 3 1/2 cups (875 ml) chicken broth
  • 1/2 cup (125 ml) 35% heavy cream or 15% cooking cream
  • 1 tsp (5 ml) whole-grain mustard
  • 2 1/2 cups (225 g) grated mild orange cheddar cheese
  • 4 cups (1 litre) cooked broccoli florets

Preparation

  1. In a saucepan, soften the shallot and garlic in the butter. Add the ham and cook for 2 minutes. Sprinkle with the flour and nutmeg and cook for 1 minute, stirring constantly.
  2. Add the broth, cream and mustard. Bring to a boil over medium heat, stirring with a whisk. Simmer gently for about 5 minutes. Remove from the heat and stir in the cheese until completely melted. Add the broccoli and heat through, without boiling. Lightly season with salt and pepper.
