  1. In a plate, crush the egg with the mayonnaise using a fork. Season with salt and pepper. You can add chopped green onion if you want. Spread a slice of bread with the egg salad and top with a second slice of bread to close the sandwich. Cut it into triangles. Eat with or without the crust!
