Ingredients

• Chicken and Celery Salad

  • 2 cups (340 g) cooked chicken, diced
  • 2 stalks celery, chopped
  • 4 green onions, finely chopped
  • 6 tbsp (90 ml) mayonnaise
  • 2 tbsp (30 ml) lemon juice
  • 3 1/2 oz (100 g) crumbled feta cheese (optional)
  • Salt and pepper

• Sandwiches

  • 1 baguette bread, cut in half horizontally
  • 1 1/2 cups (36 g) baby spinach
  • 1/4 cup (8 g) celery leaves
  • 1 tbsp (15 ml) olive oil
  • 4 long sandwich toothpicks
