Beef and Tomato Rice Casserole

  1. With the rack in the middle position, preheat the oven to 350°F (180°C).
  2. In a large ovenproof pot, brown the onion in the oil. Add the meat, garlic and turmeric. Cook over high heat, breaking the meat up with a wooden spoon, until well browned. Season with salt and pepper.
  3. Add the broth, tomatoes and rice and bring to a boil. Cover and bake for 30 minutes or until the rice is tender. Add the beans and toss gently. Adjust the seasoning. Spoon the rice into a serving dish. Cover and let rest for 10 minutes to allow the rice to absorb the remaining liquid. Sprinkle with the green onions and serve.


This casserole is even better the next day


  1. After adding cumin, paprika and white pepper it was a bit more flavorful but the blend of the recipe ingredients was great

  2. Taste is okay but not great. Way too thick. Even after adding water and more tomato still was not palatable. Tastes like gruel. Would not make again.

  3. Easy and very good for a weekday meal. Ha no turmeric so used cumin.

  4. Very tasty & easy to make.

  5. Easy to make and was a bit hit my my family.
