In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.
With the rack in the middle position, preheat the oven to 200 °C (400 °F). Line a baking sheet with parchment paper.
Spread the pancetta slices on the baking sheet. Bake for about 15 minutes or until crisp. Drain on paper towel. Set aside.
Spread the inside of the bread slices with olive mayonnaise. Layer the turkey and tomato on four slices of bread. Cover with a second slice of bread. Layer with lettuce and pancetta. Cover with the remaining bread. Insert four toothpicks in each sandwich and cut into quarters.
