Basic Rice Pilaf

  1. In a saucepan, lightly brown the onion in the butter over medium heat. Season with salt and pepper. Add the rice and cook for about 5 minutes, stirring constantly.
  2. Add the broth and bring to a boil. Cover and simmer for about 18 minutes or until the liquid is absorbed. Remove from the heat. Stir and let rest for 5 minutes, covered. Adjust the seasoning.


To this basic recipe, you can add finely chopped or grated vegetables when browning the onion.


  1. This is very good! I do add celery and grated carrots, plus a bit of sazon Goya, saffron powder. Just a touch. Adds a nice colour, and flavour, but is great without.

  2. I'm going to do it, but I want to add saffron. In the frying section or the add water/stock then wait section? Thoughts? I imagine adding saffron AND fresh garlic would be overkill and wack the flavor of the saffron, or no?

  3. This is truly delicious...MUCH better than simple, plain white rice! I most definitely will be making this again, and I wouldn't hesitate to serve it to guests too. As a bonus, it's so easy to make! Merci Ricardo.
