Maple Caramelized Pineapple
- In a large skillet, heat maple syrup until it begins to caramelize. Add pineapple and cook over medium heat, stirring frequently, for about 5 minutes or until it has released its juices and begins to caramelize. Let cool.
Coconut French Toast
- In a large bowl, combine coconut milk, eggs, sugar, lime zest and juice. Dip bread slices, one at a time, letting them soak thoroughly.
- In a large non-stick skillet, brown bread slices on each side, two or three at a time, in butter. Sprinkle with sugar and cook, turning them in the skillet so they caramelize. Clean skillet between batches. Serve immediately and garnish with caramelized pineapple and maple syrup.
You can garnish French toast with big coconut shavings or sprinkle with shredded coconut.
