Clarified butter or ready-to-use ghee can be purchased in most grocery stores. You can also prepare it at home. In a saucepan, melt 1 lb of butter and simmer for at least 20 minutes, skimming regularly. Pour the butter into a strainer; the remaining liquid is the ghee. It can be stored for several months in the refrigerator. Unlike traditional melted butter, ghee does not burn.

For the lengthy amount of preparation that went into this dish, I expected it to be truly outstanding. Sadly, it was not. I made it as written. The flavour wasn't bad but only just OK. Unfortunately, the sauce did not reduce very much at all in 20 minutes as the recipe states it should. By the time it did, the chicken thighs had broken apart into the sauce, and the sauce was still far more watery than it should have been! There was far too much time and effort put into this dish for the final result.

Remarkable dish. The depth and breath of flavour was second to none. My inly alteration was using skin on bone in thighs but otherwise used the recipe as listed here. The result was quite amazing. A must try recipe.
