    • 1 cup (250 ml) plain yogurt
    • ¼ tsp salt
    • 1/8 tsp ground coriander
    • 1/8 tsp ground black pepper
    • 1/8 tsp ground cumin
    • 1/8 tsp ground sumac (see note)
  • Pita Sandwiches

    • 3 pita breads, each 8 inches (20 cm) in diameter
    • ¾ lb (340 g) lean ground beef
    • 1 small onion, finely chopped
    • ⅓ cup (15 g) parsley, finely chopped
    • 2 tsp breadcrumbs
    • 2 tsp ground coriander
    • 1 tsp ground cumin
    • ½ tsp lemon zest, finely grated
    • 2 tbsp (30 ml) olive oil

Sumac is a tangy, lemony spice used in Middle Eastern cooking. It is sold either as whole dried berries or ground and is available in some specialty shops or Middle Eastern grocery stores.

Do not line your baking sheet with parchment paper as it may create too much humidity.
