    • ¾ cup (180 ml) mayonnaise
    • ¼ cup (60 ml) sour cream (see note)
    • 2 tbsp sour gherkins, finely chopped
    • 1 tbsp parsley, finely chopped
    • 1 tbsp capers, drained and chopped
    • 1 tbsp shallots, finely chopped
    • 1 tsp (5 ml) Worcestershire sauce
    • 1 tsp (5 ml) gherkin juice
    • ½ tsp (2.5 ml) prepared horseradish
    • Cayenne pepper, to taste

You can make the tartar sauce with 1 cup (250 ml) of mayonnaise and omit the sour cream, but we prefer the addition of sour cream to make the sauce less rich.
