Apple and Fennel Wild Rice Salad

Rice

  1. In a saucepan, bring the rice, water and salt to a boil. Cover and let simmer over medium heat for 40 minutes or until the rice bursts open. Drain and rinse under cold running water. Set aside.

Dressing

  1. Meanwhile, in a small bowl, combine all the ingredients. Set aside.

Salad

  1. With a mandoline, thinly slice the fennel and place in a bowl. Add the apples, lemon juice and salt. Let marinate for 15 minutes.
  2. Add the lentils, currants, rice and dressing. Season with salt and pepper and toss well.
