Lengthy meal prep eats up precious time in the kitchen—so does a mountain of dirty dishes. Hello, one-pot meals. Our first recipe for one-pot mac ’n’ cheese is just as decadent and silky as the béchamel-based fave we grew up with. When the dried pasta cooks in the chicken broth and milk, starches escape and thicken the mixture before two types of cheese (and porky pancetta) take the party to another level.

    • 4 oz (115 g) pancetta, diced
    • 1 tsp dry mustard
    • 1 tsp chili powder
    • 3 cups (750 ml) chicken broth
    • 2 cups (500 ml) milk
    • 2 1/4 cups (340 g) elbow macaroni
    • 1/4 cup (60 ml) mascarpone cheese
    • 2 cups (200 g) grated sharp cheddar cheese
