Ricardo's recipe: Honey-Roasted Orange Chicken

  1. With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine the honey and sambal oelek.
  3. On the prepared sheet, toss the potatoes with the oil. Arrange the chicken thighs with the potatoes, skin side up. Brush the thighs with the honey mixture. Season with salt and pepper, then scatter the orange slices overtop. Bake for 1 hour or until the meat easily detaches from the bone and the potatoes are tender.
  4. Serve the chicken and potatoes with sautéed kale with garlic (see recipe), if desired.

  1. please comment on the comment by Dianne T... 425 deg is a long time....should the temp be turned down once it is placed in the oven ? Lloyd Leonard

  2. The chicken was moist and delicious with the honey and spices coating. Both preteen kids love it and have asked to have this recipe again.

  3. One hour @ 425 deg. is ridiculous. The chicken coating was burned and chicken to dry to eat. We took it out @ 50 min. We questioned it before cooking - 375 deg. would be more than enough. Better check your oven.

  4. Can you replace hot sauce with maybe tomatoe paste?
