Zucchini and Mint Fritters

  1. In a large bowl, combine all the ingredients except the oil. Season with pepper.
  2. Working with your hands, shape each fritter using about 3 tbsp (45 ml) of the mixture. Set aside on a plate.
  3. In a large non-stick skillet over medium-high heat, heat inch (1 cm) of oil. Brown half of the fritters at a time, about 3 minutes on each side. Set aside on paper towels.
  4. Serve with tzatziki sauce or plain yogurt, if desired.
