Almond Hot Chocolate with Crushed Cranberry Meringue

Ingredients

    Almond Hot Chocolate

  • 4 cups (1 litre) fortified almond beverage (sweetened)
  • 4 oz (115 g) dark chocolate 56%, chopped
  • 3 tbsp (45 ml) almond butter
  • 1 tbsp cocoa powder

    Topping

  • 1/4 cup (60 ml) 35% cream
  • 1 1/2 tsp sugar
  • A few pieces cranberry meringue (see recipe)

Preparation

Almond Hot Chocolate

  1. In a pot, combine all of the ingredients. Bring to a boil over medium heat, whisking constantly.

Topping

  1. In a bowl, whisk the cream and sugar until semi-firm peaks form.
  2. Serve the hot chocolate topped with a spoonful of whipped cream and pieces of cranberry meringue, if desired.
