Mafaldine Pasta with Mushrooms and Braised Pork (Mafaldine al Sugo di Funghi e Maiale)

  • 1 small leek, chopped
  • 2 garlic cloves, chopped
  • 1/3 cup (75 ml) white wine
  • 3 cups (750 ml) chicken broth
  • 1/2 oz (14 g) dried bolete mushrooms, finely chopped
  • 1 rosemary sprig
  • 3/4 lb (340 g) pappardelle, mafaldine or other long, wide pasta
  • 1/2 cup (125 ml) 15% cooking cream or 35% cream
  • 1/3 cup (25 g) Parmesan cheese, freshly grated
  • 1/3 cup (15 g) parsley, finely chopped
