Ingredients: 1 large carrot; 1 tbsp (15 ml) rice vinegar; 1 tsp sugar; 8 slices white sandwich bread; 1/3 cup (75 ml) mayonnaise; 3 tbsp (45 ml) hoisin sauce; 1 ½ cups (255 g) cooked chicken, thinly sliced; 2 Lebanese cucumbers, cut into rounds; ½ jalapeño pepper, seeded and thinly sliced; Cilantro leaves, to taste

Preparation

- Using a vegetable peeler, cut the carrot into long ribbons. In a bowl, combine the carrot ribbons with the vinegar and sugar. Let sit for 5 minutes. Drain.
- Cover one side of each bread slice with the mayonnaise. Drizzle with hoisin. Divide the chicken among 4 pieces of bread. Top with the cucumbers, carrot ribbons, jalapeño and cilantro. Close the sandwiches.
