- On a lightly floured work surface, divide the pizza dough into 8 equal pieces (75 g each). Using your hands, form the pieces of dough into balls. Let rest for 10 minutes.
- Preheat a waffle iron on high. Using a pastry brush, lightly oil the cavities.
- On a work surface, coat the dough balls in the oil and press with your fingertips to flatten slightly. Press the olives into the dough. Sprinkle with the Parmesan, oregano and red pepper flakes.
- Place 4 pieces of dough in the cavities of the waffle iron. Close the device. Cook for 6 minutes or until the focaccia are golden and crispy. Repeat with the remaining dough. Cut into triangles, if desired. Serve with hot marina sauce for dipping, if desired.
